Hey guys, today I’ll share my birthday cake recipe with you.
Why now you may ask, well today it’s my moms birthday. So I thought why not share it with you all and I will also show you what I got her and stuff.
For cake:
-2¾ cups self raising flour (345 gram)
-1½ cups sugar (300 gram)
-¼ teaspoon salt
-16 tablespoons (2 sticks) butter, room temperature (225 gram)
-1 cup milk, divided (250 ml)
-4 eggs
Instructions
For cake:
-Preheat oven to 180°C.
-Butter your two baking pans and also flower them.
-In a mixing bowl, lightly whisk together first 3 ingredients; flour, sugar, salt.
-Add butter and ¾ cup milk to the mixture, and beat together until just combined. Stop to scrape sides down a couple of times. Do not over beat.
-In a separate bowl, lightly beat eggs, remaining milk and vanilla extract together.
-Gradually add to the flour/sugar/butter mixture, and mix until just combined. Again, do not over beat.
-Divide batter into two greased and parchment lined 9″ baking pans.
-Bake at 180°C/ 350°F for 30-35 minutes, or until cake tester or toothpick comes out clean.
( Because my cakes were at different heights, I changed them after 15 minutes.)
-After 30-35 minutes, let them cool down ( on a wire rack)
the frosting
12 Tbs. (6 oz.) unsalted butter, softened (175 grams)
1/2 cup (2 oz.) confectioners’ sugar, sifted if lumpy (55 gram)
1 Tbs. milk (whole or 2%)
1/8 tsp. table salt
4 oz. chocolate, melted (115 gram) ( you can use whatever chocolate you like.)
Make the frosting
1. Put the butter in the bowl of a stand mixer fitted with the paddle attachment (or in a medium bowl using an electric handheld mixer fitted with wire beaters). Beat on medium speed until well blended and smooth, about 1 minute.
2. Add the confectioners’ sugar, milk, vanilla and salt and beat on medium-high speed until well blended, about 2 minutes.
3. Add the melted milk chocolate and beat until well blended and fluffy, about 1 minute. Stop to scrape down the bowl. Cover the frosting and set aside at room temperature until the cake is completely cool and ready to be frosted.
4. Start to frost and decorate your cake!

So first of all I made a birthday card.
And when I was in London, we went in to Lush (it’s like this shop where you can get bath bombs and stuff) and I bought her the relax package.
And then I made her this cake and in the morning I made some pancakes for her.
